High-Protein Cottage Cheese & Oat Chocolate Chip Pancakes

Pancakes are a delicious sweet breakfast treat, but traditional pancakes contain little protein or fiber to fill you up and stabilize blood sugar. This recipe allows you to still enjoy your pancakes, but without the blood sugar roller coaster. They’re also significantly more filling and a bit higher in fiber thanks to the oats. All you need is a food processor or blender and a few simple ingredients to whip up this tasty breakfast. While I used dark chocolate chips as the mix-ins, blueberries or banana slices would work well here too!

Ingredients:

  • 1/2 cup low-fat cottage cheese

  • 1/2 cup rolled oats

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1 Tbsp granulated sweetener of choice (I used coconut sugar)

  • Optional handful of dark chocolate chips (or use pieces of a dark chocolate bar broken into small chunks)

Directions:

  1. Add all ingredients except for the dark chocolate chips to a food processor and blend until smooth.

  2. Heat a skillet greased with avocado oil over medium-low heat.

  3. Spoon the batter onto the pan to form pancakes of your desired size, and add the dark chocolate chips to each pancake.

  4. Cook for about ~2-3 minutes per side.

  5. Serve warm with a sprinkle of cinnamon and any additional desired toppings, such as a drizzle of nut butter, fresh fruit, or a drizzle of pure maple syrup. Enjoy!
