Tuna, Sweet Potato, & Zucchini Patties With Tahini Sriracha Dipping Sauce

This easy recipe is tasty, nutritious, and perfect if you’re on a budget or short on groceries - all you need is canned tuna, a sweet potato, egg, and some veggies! Rich in protein and omega-3 fatty acids, tuna is a great staple to keep on hand. I prefer wild skipjack tuna, since it tends to be lower in mercury than other varieties (like albacore). This recipe would also work nicely with other canned fish, like salmon or even skinless sardines. The optional sweet and spicy tahini sriracha dipping sauce really makes the dish, and it pairs well with roasted vegetables. I added avocado on the side for a boost of fiber and additional healthy fats!

Ingredients:

For the tuna patties:

  • 1 can of skipjack tuna, drained

  • 1/2 a medium sweet potato, boiled and mashed

  • 1/2 a medium-sized zucchini, grated

  • 1/4 of an onion, minced

  • 1 scallion, finely chopped

  • 1 egg

  • Salt & pepper to taste

  • Pinch of paprika

  • 1/4 tsp garlic powder

  • Pinch of coriander

  • Pinch of cumin

  • 1 Tbsp parsley (I used dried, but finely chopped fresh parsley is even better!)

For the dipping sauce:

  • 1/4 cup tahini

  • 1 Tbsp sriracha (use less if you prefer less spice)

  • 2 tsp honey

  • 2 tsp low-sodium tamari

  • 1 Tbsp lemon juice

  • 1 Tbsp warm water (to thin - add more if you’d like it even thinner)

  • 1 garlic clove, pressed

  • For cooking: olive oil spray (or avocado oil spray)

Directions:

  1. Preheat oven or air fryer to 375° F

  2. Add the tuna to a large mixing bowl, using a fork to mash

  3. Add the rest of the ingredients to the tuna, mixing thoroughly until well-combined

  4. Form into small patties or balls and lightly spray the outside with olive oil (or avocado oil). Arrange on a baking sheet and bake or air fry until golden brown on the outside, flipping over halfway through to cook each side (about 20-30 minutes in total)

  5. For the dipping sauce, combine all ingredients in a small bowl and whisk together until smooth and ingredients are fully integrated. Adjust seasonings to your taste preference

  6. Serve with a vegetable of your choice (I paired them with air-fried zucchini and sliced avocado), and enjoy!
