Frozen PB & Banana Bites
If you like to have a little something sweet after dinner or as a midday snack, then this is just the thing! These bites satisfy a sweet tooth, but contain only the natural sugar found in banana and a tiny bit in the dark chocolate. You can also make a chocolate dipped version by dipping the banana sandwiches into melted dark chocolate before freezing them. If peanut butter isn’t your thing, these work well when made with other nut and seed butters like almond butter, sunflower seed butter, tahini, or hazelnut butter.
Ingredients (yields 2 servings):
1 large banana, sliced into 1/4 inch thick “coins”
2 Tbsp creamy peanut butter (or nut/seed butter of choice)
Handful of extra dark chocolate chips (the mini size works best)
Optional:
Sprinkle of cinnamon
Directions:
Lay the banana slices onto a baking sheet lined with parchment paper or a cutting board.
Make “sandwiches” by spreading dollops of the peanut butter on top of a banana slice along with a few dark chocolate chips (and an optional shake of cinnamon), then top with another banana slice, repeating the process until all of the banana slices are used.
Freeze for at least 1 hour, allowing the sandwiches to harden. Enjoy!
