3 (ish) Ingredient Flourless Banana Cinnamon Pancakes
These easy banana pancakes are a healthier take on the classic breakfast food, with extra nutrition, minimal ingredients, and less of a blood sugar spike. They can be made with just 3 ingredients that you probably already have in your kitchen (banana, egg, and nut butter), or you can add additional flavorings and mix-ins like I did.
For extra protein, I like to serve my pancakes with a dollop of plain Greek yogurt. A drizzle of your favorite nut butter or some pure maple syrup goes well with these, too!
Ingredients (yields 1 serving):
1 large banana, mashed
1 large egg, beaten
1 Tbsp nut butter of choice (I used peanut butter)
1/4 tsp vanilla extract
Cinnamon to taste
Pinch of salt
Oil for cooking (I prefer olive oil, avocado oil, or coconut oil)
Optional mix-ins:
Dark chocolate chips, ground flaxseeds or chia seeds, cocoa powder, crushed walnuts, fruit (blueberries, chopped apples, raspberries, etc.), pumpkin spice, plain Greek yogurt (for extra protein!), oat flour, pure maple syrup or honey
Directions:
Thoroughly mash the banana until it reaches the consistency of pudding (a few lumps are okay).
Add the cinnamon, peanut butter, vanilla extract, salt, and any other desired mix-ins/flavorings.
Stir in the beaten egg and mix until throughly combined.
Spray a non-stick pan with olive oil, avocado oil, or coconut oil and heat over medium heat.
Drop about 2 Tbsp of batter onto the hot pan and cook as you would regular pancakes, flipping each pancake over once you see small bubbles appear on the surface and the bottom appears golden brown when you lift up a corner (about 1 minute).
Cook for about another minute on the other side, and transfer to a plate.
Sprinkle the tops of the pancakes with more cinnamon, add any additional toppings if desired, and enjoy!
