Cacao Chia Seed Pudding
This chocolatey chia seed pudding is the perfect sweet treat, snack, or even breakfast! When exposed to moisture, chia seeds swell, forming a gelatinous consistency similar to pudding. This swelling occurs due to their soluble fiber content, a type of fiber that holds onto water in the GI tract. Soluble fiber may help to improve various gastrointestinal symptoms, helps us feel full, promotes stable blood sugar, helps to lower cholesterol, and feeds our good gut microbes to promote a healthy gut microbiome. Get creative by adding additional toppings such as fruit, spices, and more, for other flavor profiles. Enjoy!
Ingredients (yields 1-2 servings):
2 Tbsp chia seeds
1/2 cup unsweetened almond milk (or other milk of choice)
1/2 cup plain Greek yogurt (I used 0% fat, but any kind will work)
1/2 tsp vanilla extract
1 Tbsp cacao powder
Pinch of kosher salt
1 1/4 tsp pure maple syrup
Toppings:
1 Tbsp cacao nibs
Any additional toppings desired (I.e. raspberries, strawberries, banana, cinnamon, nut/seed butter or peanut powder, etc.)
Directions:
Add all ingredients to an airtight container (such as a glass mason jar) and mix until well-combined.
Cover the container and refrigerate for at least 5 hours or overnight.
Top with cacao nibs (and any other desired toppings), and enjoy!
Note: stays well in the fridge for ~2-3 days.
