Chickpea Cookie Dough Dip
This tasty dip is like a dessert version of hummus! It takes just a few minutes to prepare and is packed with fiber, plant-based protein, and flavor. Perfect to pair with apple slices, strawberries, or whole grain crackers for dipping. This recipe makes for a great (secretly nutritious) snack for both kids and adults alike!
Ingredients:
1 can of chickpeas, rinsed and drained
1/4 cup peanut butter (I used natural creamy peanut butter)
2 tsp vanilla extract
2-3 Tbsp pure maple syrup (depending on desired level of sweetness)
1 tsp cinnamon
1/4 tsp salt
1 Tbsp oat flour
1 Tbsp unsweetened almond milk (or other milk/milk alternative of choice)
1/4 cup dark chocolate chips
Directions:
Add all ingredients except for the dark chocolate chips to a food processor and blend until nice and smooth. The consistency should be similar to hummus.
Stir in the dark chocolate chips.
Pour into a dish or glass container, and enjoy!
Note: store in the fridge in an airtight container (I prefer glass)
