Whipped Garlic Greek Yogurt Dip
This addictive dip is so simple, yet so tasty and flavorful. It’s a great way to dress up vegetable slices, to add to salads, wraps, roasted vegetables, fish, chicken, and more! While I used scallions and thyme, feel free to take creative license and add any other herbs/seasonings you like - dill, parsley, mint, chives, sumac, oregano, rosemary, or whatever else you have lying around!
Ingredients:
1/2 cup plain Greek yogurt (I used non-fat, but low-fat or full-fat work too!)
8-10 garlic cloves, peeled
1/4 cup crumbled feta cheese
1 scallion, finely chopped (can substitute for handful of chives or parsley if desired)
1 Tbsp fresh lemon juice
Pinch of thyme (I used dried)
Generous pinch of salt & pepper to taste
Olive oil for roasting the garlic (enough to fully coat the cloves - about 2 Tbsp)
Directions:
Preheat oven to 400° F.
Coat garlic cloves with olive oil and place in a small ramekin or in tin foil. Roast until soft and fragrant (~25-30 mins depending on oven).
Let the garlic cool (about 5 minutes).
Add the roasted garlic and all other ingredients (including the leftover olive oil) to a food processor. Blend until you achieve a whipped texture and ingredients are fully combined.
Transfer into a bowl and top with a drizzle of olive oil and extra thyme or other fresh herbs of choice. Serve with sliced vegetables, such as cucumbers for dipping. Enjoy!
Note: store in an airtight container in the refrigerator.
