Cinnamon Roasted Butternut Squash
This festive dish is perfect to bring to holiday gatherings, enjoy as a dinner side dish, or jazz up a salad. Aside from being delicious, butternut squash is rich in beta carotene, a vitamin A precursor and potent antioxidant beneficial for immunity, eye health, skin health, and much more! It’s also an excellent source of fiber to promote a healthy gut microbiome. Despite its fiber content, butternut squash is soft and easy-to-digest, making it an excellent choice for those with active IBD or sensitive digestive tracts.
Ingredients (yields ~5 servings):
1 medium-sized butternut squash, peeled, seeded, and cut into cubes
2 Tbsp extra virgin olive oil
3/4 tsp kosher salt
1/2 tsp cinnamon, plus extra for serving
1/4 tsp nutmeg
Directions:
Preheat oven to 375 ºF
Place the cubed butternut squash into a large bowl along with the olive oil and toss until the butternut squash cubes are evenly coated
Sprinkle the salt, cinnamon, and nutmeg over the butternut squash cubes and give them a few good tosses until they are evenly coated with the spice mixture
Grease a baking sheet with olive oil and lay the butternut squash cubes on the baking sheet in a single layer
Bake for 15 minutes, then flip the butternut squash cubes over with a spatula and bake for another 15-20 minutes, or until the butternut squash cubes are slightly browned on the edges
Remove from the oven, sprinkle with extra cinnamon to taste, and serve warm. Enjoy!
