Cauliflower Mash

This creamy cauliflower mash is a great way to incorporate cruciferous vegetables into your diet in a way that is both easy-to-digest and delicious! It’s reminiscent of mashed potatoes, but contains less saturated fat and fewer carbohydrates. It’s easy to make and perfect for a Thanksgiving side dish or as an accompaniment to a weeknight dinner.

Ingredients (Yields ~4-5 servings):

  • 1 Tbsp olive oil

  • 2 garlic cloves, minced

  • 1/4 cup diced yellow onion

  • 1 16-ounce bag of riced cauliflower (fresh or frozen)

  • 3 Tbsp plain Greek yogurt (I used non-fat, but any fat percentage will work! **Plain unsweetened coconut yogurt can be substituted for a dairy-free version)

  • 1/4 tsp salt

  • Pinch of black pepper to taste

  • Optional: 3-4 Tbsp grated parmesan or pecorino romano cheese to taste (*nutritional yeast can be substituted for a dairy-free version)

Directions:

  1. In a sauté pan, sauté the minced garlic and diced onion in the olive oil over medium heat until fragrant.

  2. Add the riced cauliflower to the pan and continue to sauté over medium heat for a few minutes until tender. Remove from heat and let cool for ~5 minutes.

  3. Add the sautéed garlic, onion, cauliflower, Greek yogurt, salt, pepper, and grated cheese (optional) to a food processor or blender. Blend until smooth.

  4. Serve warm and enjoy!
