Whole Wheat Popovers
Surprisingly, popovers are one of the easiest things to make. Just 4 ingredients, about 25 minutes in the oven, and you’ve got yourself a tasty side dish that is sure to impress company! This recipe calls for whole wheat pastry flour which is a bit higher in fiber compared to conventional white flour, making these heartier and more nutrient-dense than your average popover. I also used unsweetened almond milk, but you can sub in skim dairy milk for a similar result. These go great with a hearty veggie soup, stew, chili, summer barbecue, or really anything!
Ingredients (yields 6 popovers):
1 cup whole wheat pastry flour
1 cup unsweetened plain almond milk or dairy milk
1/2 tsp salt
2 large eggs
Directions:
Preheat oven to 425 degrees F.
In a medium-sized bowl, beat the eggs together and set aside.
In a saucepan, warm the almond milk, then transfer to the bowl with the eggs.
Beat the salt, eggs, and flour into the warmed almond milk.
Pour the batter into popover tins, filling each about 1/2 way full.
Bake for ~22-25 minutes.
