Mint Chip Smoothie

If you're a mint chip ice cream fan, then this smoothie is definitely for you! It almost tastes like eating a refreshing bowl of mint chip ice cream for breakfast, but without the sugar crash afterwards. Spirulina (a blue-green algae), spinach, and fresh peppermint leaves give this smoothie its minty green color along with a boost of nutrient density. Spinach, peppermint leaves, and spirulina all contain iron, vitamin A, vitamin K, and antioxidants. Spirulina in particular is incredibly nutrient-dense, and made up of 60% protein. A teaspoon-sized serving also contains 150% of your daily value of vitamin B12--a nutrient that supports metabolism, energy, and is generally hard to find in plant-based sources.

Ingredients (yields 1 serving):

  • 1 small frozen banana

  • 1/2 cup frozen cauliflower rice

  • 1/2 cup fresh spinach

  • 1/2 tsp spirulina powder (optional - this makes the green color more vibrant)

  • 1 scoop vanilla protein powder of choice (I like Nuzest Vanilla Clean Lean Protein)

  • 1 Tbsp almond butter

  • 1 Tbsp unsweetened cacao powder

  • ~1/4 tsp pure peppermint extract

  • 5-10 fresh peppermint leaves (depending on how minty you like your smoothie)

  • 1 Tbsp unsweetened cacao nibs

  • ~3/4 cup unsweetened vanilla almond milk (or other unsweetened milk of choice)

Blend, top with extra cacao nibs, and enjoy!
