Dark Chocolate Chickpea Fudge Brownies (Vegan & GF)
If you’re a dark chocolate fan, you’re sure to love these ultra fudgy, better-for-you brownies! They’re rich in fiber, protein, and antioxidants, and they’re the perfect not-too-sweet treat that you can feel good about incorporating into your diet regularly to satisfy a sweet tooth. By tasting them, you’d never know there’s a full can of chickpeas blended in, or that they’re sweetened primarily with the natural sugars found in bananas.
Between the chickpeas, bananas, oats, cocoa, and peanut butter, these brownies contain multiple prebiotic sources, which help to support a healthy gut microbiome.
Ingredients:
1 can of chickpeas, rinsed and drained
2 ripe bananas
1/2 cup cocoa powder
1 tsp vanilla extract
2 Tbsp pure maple syrup
1/3 cup rolled oats
1/3 cup creamy peanut butter
Pinch of salt
1/2 cup extra dark chocolate chips
Directions:
Preheat oven to 350 degrees F.
Add all ingredients except for the chocolate chips to a food processor and blend until smooth.
Stir in the chocolate chips.
Pour the mixture into a greased brownie pan (I used 8”x 8”) and bake for ~30 minutes.
Let cool, slice, and enjoy!
Notes: these store best in the fridge.
