Peppermint Dark Chocolate Truffles (Vegan & GF)
If you're looking for a healthier-for-you holiday treat, try these truffles! They're easy to make and all you need are a few simple ingredients that you may already have lying around. These truffles happen to be gluten-free, dairy-free, and vegan, and they're much lower in sugar than your average truffle. If you'd like, you can get fancy and coat these in extra cocoa powder or dip in extra melted dark chocolate, but they're also delicious as is.
Ingredients (yields ~10 truffles):
1/4 cup finely ground almond flour
2 Tbsp coconut flour
1/4 cup cocoa (or cacao) powder
1 Tbsp pure maple syrup
1/4 tsp peppermint extract
1/8 tsp vanilla extract
Pinch of salt
1/2 cup 70% cacao dark chocolate chips
2 Tbsp unsweetened almond milk (or milk of choice)
Directions:
In a small bowl, mix together the almond flour, coconut flour, cocoa powder, and salt until well-combined.
Add the pure maple syrup, peppermint extract, and vanilla extract and mix thoroughly.
In a double boiler, melt the dark chocolate chips with the almond milk, stirring as the chocolate melts, to combine the melted chocolate and almond milk.
Pour the melted chocolate/almond milk mixture into the bowl with the flour mixture and mix until well combined.
Form tablespoon-sized balls out of the mixture, rolling them with your hands.
Refrigerate truffles for at least 15-20 minutes to harden. Enjoy!
