Silken Tofu Chocolate Pudding (Vegan & GF)
This easy-to-make vegan dessert tastes decadent but is secretly packed with nutrition! It also doesn’t require an oven or any cooking for that matter.
When blended, silken tofu has a rich and creamy texture. It’s also packed with essential amino acids and anti-inflammatory compounds such as isoflavones. Cocoa powder and melted dark chocolate give it a rich, chocolatey flavor and a dash of pure maple syrup provides just enough sweetness. Ingredients:
12-ounce package of silken tofu (I used Mori-Nu brand)
2 Tbsp cocoa powder
2 Tbsp pure maple syrup
1/2 cup dark chocolate chips, melted
1/2 tsp vanilla extract
1/2 tsp freeze dried coffee (I used decaf)
Pinch of salt
Directions:
Add the silken tofu, cocoa powder, maple syrup, vanilla extract, and freeze dried coffee to a food processor or blender.
Blend until smooth.
Melt the dark chocolate chips in a double boiler over the stove, or in the microwave using a small microwave-safe dish.
Pour the melted dark chocolate into the food processor with the silken tofu mixture and blend until well combined and completely smooth.
Transfer into an airtight container and refrigerate for at least one hour before serving, to allow the pudding to set. Enjoy!
